These balsamic vinegars are aged in wooden barrels. Each year the vinegar is moved to a different barrel (often made from a different wood). The result is that, as the vinegar ages, its taste becomes more complex. Over time more evaporation occurs, producing a sweeter and more syrupy balsamic.
